Get to Know Catherine McCord

Catherine McCord is the founder of the popular Weelicious  brand, a trusted content resource synonymous with family and food as well as the co-founder of One Potato. A graduate of the Institute of Culinary Education, she has created online how-to videos that have amassed more than fifty million views and celebrities like Jennifer Garner, Sarah Michelle Gellar & Keri Glassman, RD, swear by her food as a medicine approach to healthy tonics. She has written three cookbooks including her latest Smoothie Project. In addition to gracing magazine covers and Victoria’s Secret runways as a model, Catherine has appeared on TODAY, Good Morning America, California Live, The Kelly Clarkson Show, The Doctors, and is a regular on the Emmy-winning NBC show Naturally, Danny Seo as well as Food Network’s #1-rated Guy’s Grocery Games and a new show premiering this summer with Ree Drummond. Banana Yogurt Cake

Prep Time: 10 mins - Cook Time: 25 mins

Ingredients

  • 1 1/2 cups white whole wheat flour
  • 1/3 cup brown sugar
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon kosher salt
  • 1 cup Two Good Vanilla Low Fat Lower Sugar Greek Yogurt
  • 3 small very ripe bananas, mashed
  • 1 large egg
  • 1/4 cup canola oil
  • 1 teaspoon vanilla extract
  • Optional Glaze:
  • 1 cup powdered sugar
  • 2 tablespoons Two Good Vanilla Low Fat Lower Sugar Greek Yogurt
  • milk (if needed for desired consistency) 

Preparation:

  1. Preheat the oven to 375F.
  2. In a large bowl, whisk together the flour, sugar, baking powder, baking soda, cinnamon, and salt.
  3. In a separate bowl, whisk together the yogurt, mashed banana, egg, oil, and vanilla.
  4. Pour the yogurt mixture into the flour mixture and mix until just combined.
  5. Pour the batter into a greased 8-inch square baking dish.
  6. Bake for 25-30 minutes, until a toothpick inserted in the center comes out clean.

Turkey Pickle Roll-Ups

Turkey Pickle Roll-Ups

Makes: 8-10 Roll-Up Slices

Ingredients

  • 1 package Oscar Mayer Deli shaved Turkey Breast Oven Roasted
  • 1/2 cup whipped cream cheese
  • 4 whole dill pickles 

Preparation:

  1. Spread turkey with whipped cream cheese, using about 1 Tbsp cream cheese for each slice.
  2. Place one pickle spear on turkey slice. Roll up. 
  3. Cut each roll-up into 4-5 pieces. Secure with toothpicks, if desired.

Rainbow Roll-Up Sandwiches

Rainbow Roll-Up Sandwiches

Makes: 6-8 Roll-Up Slices

Prep Time: 5 mins - Cook Time: 0 mins 

Ingredients

  • 1 large tortilla or lavash bread
  • 1/3 cup hummus of choice
  • 1/2 red bell pepper, thinly sliced
  • 1 small carrot, thinly sliced
  • Signature Farms mini-sweet bell peppers, thinly sliced
  • 1/4 cup fresh spinach
  • purple cabbage, thinly sliced or finely chopped 

Preparation:

  1. Spread hummus evenly on tortilla or lavash bread. 
  2. Place chopped vegetables in rainbow color order towards the middle of the wrap. Leave the edges with just hummus so that it will stick together. 
  3. Roll up tightly, then slice into coins.

Grilled Pizza Roll-ups

Makes: 4 roll-ups

Prep Time: 5 mins - Cook Time: 5 mins 

Ingredients

  • 4 slices sandwich bread
  • 4 mozzarella cheese sticks or 1/2 cup grated mozzarella
  • 4 pepperoni, diced optional
  • 1/2 cup Prego Traditional Italian Sauce, warmed
  • 1 tablespoon butter 

Preparation:

  1. Cut the crusts off the bread.
  2. Using a rolling pin, roll out the pieces of bread until flat.
  3. Place a cheese stick or 2 tablespoons of cheese on the edge of the bread closest to you and add the diced pepperoni if desired.
  4. Tightly roll up the bread pressing the seam/end down to adhere.
  5. Heat butter in a sauté pan over medium heat and cook the roll ups seam side down for 1-2 minutes or until golden.
  6. Continue sautéing the rollups on each side until golden all over.
  7. Cut each roll up into 4 “sushi rolls” and serve with Prego Traditional Italian Sauce.

Makes: 4 kabobs

Time: 10 mins 

Ingredients

  • 4 slices Oscar Mayer Deli shaved Turkey Breast Oven Roasted
  • 1 Avocado
  • 4 slices cooked bacon, cut into 1-inch strips
  • 4 leaves romaine lettuce
  • 16 cherry tomatoes
  • 4 slices whole grain sandwich bread, cut into 1-inch cubes 

Preparation:

  1. Alternating ingredients on skewer, thread bread, bacon, turkey, tomatoes, lettuce onto skewers and serve.

Summer Pasta Salad

Makes: 6 Servings

Prep Time: 1 mins  - Cook Time: 5 mins

Ingredients

  • 16 ounces pasta (fusilli, macaroni or other small pasta shape)
  • 1 tablespoon plus 1 teaspoon kosher salt
  • 2 ears of corn, yellow or white
  • 1 pound asparagus, stems removed
  • 1 cup cherry tomatoes, halved
  • 3 tablespoon olive oil
  • 1/4 cup parmesan cheese
  • fresh herbs such as basil or chives if desired
  • 1/3 cup Wishbone Italian Dressing 

Preparation:

  1. Bring a large pot of water to a boil, add 1 tbsp salt to the water and cook pasta according to package directions.
  2. Place the corn and asparagus in a steamer pot of boiling water and cook for 3-4 minutes.
  3. When the corn is cool, cut it off the cob and dice the asparagus into small pieces.
  4. Thoroughly combine all the ingredients in a bowl and season with more salt, pepper or fresh herbs if desired.
